Ingredients
- 4 large whole wheat tortillas
- 1 cup hummus
- 1 cup spinach leaves
- 1 cup roasted red peppers, sliced
- 1 cup feta cheese, crumbled
- ½ cup kalamata olives, sliced
- 1 small cucumber, thinly sliced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Lay out the whole wheat tortillas flat on a clean cutting board or a large plate.
- Evenly spread about a quarter cup of hummus over each tortilla.
- Add spinach leaves, roasted red peppers, feta cheese, kalamata olives, and cucumber slices on top of the hummus.
- Sprinkle dried oregano, salt, and pepper over the fillings.
- Carefully roll each tortilla tightly to form a log.
- Using a sharp knife, slice the rolled tortillas into 1-inch thick pinwheels.
- Arrange them cut-side up on a serving platter and serve immediately or chill for a few hours.
