Description

A delightful and light dish that transports you straight to sun-soaked coastlines. These Mediterranean Pinwheels are versatile and easy to make, perfect for gatherings or a healthy snack.


Ingredients

  • 4 large whole wheat tortillas
  • 1 cup hummus
  • 1 cup spinach leaves
  • 1 cup roasted red peppers, sliced
  • 1 cup feta cheese, crumbled
  • ½ cup kalamata olives, sliced
  • 1 small cucumber, thinly sliced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Lay out the whole wheat tortillas flat on a clean cutting board or a large plate.
  2. Evenly spread about a quarter cup of hummus over each tortilla.
  3. Add spinach leaves, roasted red peppers, feta cheese, kalamata olives, and cucumber slices on top of the hummus.
  4. Sprinkle dried oregano, salt, and pepper over the fillings.
  5. Carefully roll each tortilla tightly to form a log.
  6. Using a sharp knife, slice the rolled tortillas into 1-inch thick pinwheels.
  7. Arrange them cut-side up on a serving platter and serve immediately or chill for a few hours.
