Easy and colorful grilled veggie skewers that offer smoky flavor and are a crowd-pleasing vegetarian option for summer meals.
Ingredients
- 1 cup Bell peppers, assorted colors
- 1 cup Zucchini, medium-sized
- 1/2 cup Red onion
- 1 cup Cherry tomatoes
- 2 tbsp Olive oil
- 1 tsp Garlic powder
- 1/2 tsp Salt
- 1/2 tsp Pepper
- Skewers (wooden or metal)
Instructions
- Preheat the grill to medium-high heat.
- Cut the bell peppers, zucchini, and red onion into bite-sized pieces.
- Thread the vegetables onto skewers, alternating colors and types.
- Mix olive oil, garlic powder, salt, and pepper in a bowl.
- Brush the vegetable skewers with the oil mixture.
- Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the veggies are tender and slightly charred.
- Remove from the grill and serve warm.
Notes
To prevent wooden skewers from burning, soak them in water for at least 30 minutes before grilling.
