A refreshing salad featuring fresh figs, creamy goat cheese, and earthy arugula, balanced by a zesty dressing.
Ingredients
- 3 slices of bacon, diced and cooked
- 2 cups baby arugula
- 2 cups mixed greens
- 5 fresh figs, cut into 1/4ths
- 2 oz goat cheese
- 2 tbsp salted pistachios
- 2 tbsp red onion, thinly sliced
- 1 tbsp chives, finely diced
- 1/4 cup good quality olive oil
- 2 tbsp good quality balsamic vinegar
- 1 tbsp maple syrup
- 1 garlic clove, crushed
- 1/4 tsp dried thyme
- Salt and pepper to taste
Instructions
- Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, maple syrup, crushed garlic, dried thyme, salt, and pepper. Taste and adjust seasonings if necessary.
- Assemble the Salad: In a large bowl, combine the baby arugula and mixed greens. Toss gently to mix.
- Add the diced bacon, fresh figs, goat cheese, pistachios, sliced red onion, and chives to the greens.
- Drizzle with the dressing and toss gently until everything is well coated.
Notes
For best results, dress the salad just before serving to maintain crispness.
