Description

A refreshing salad featuring fresh figs, creamy goat cheese, and earthy arugula, balanced by a zesty dressing.


Ingredients

  • 3 slices of bacon, diced and cooked
  • 2 cups baby arugula
  • 2 cups mixed greens
  • 5 fresh figs, cut into 1/4ths
  • 2 oz goat cheese
  • 2 tbsp salted pistachios
  • 2 tbsp red onion, thinly sliced
  • 1 tbsp chives, finely diced
  • 1/4 cup good quality olive oil
  • 2 tbsp good quality balsamic vinegar
  • 1 tbsp maple syrup
  • 1 garlic clove, crushed
  • 1/4 tsp dried thyme
  • Salt and pepper to taste


Instructions

  1. Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, maple syrup, crushed garlic, dried thyme, salt, and pepper. Taste and adjust seasonings if necessary.
  2. Assemble the Salad: In a large bowl, combine the baby arugula and mixed greens. Toss gently to mix.
  3. Add the diced bacon, fresh figs, goat cheese, pistachios, sliced red onion, and chives to the greens.
  4. Drizzle with the dressing and toss gently until everything is well coated.

Notes

For best results, dress the salad just before serving to maintain crispness.
