Ingredients

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 cup almond milk (or any plant-based milk)
  • 1 cup mixed dried fruits (e.g., raisins, currants, chopped dates)
  • 1/2 cup chopped nuts (e.g., walnuts or pecans)
  • 1/2 cup vegetable oil or coconut oil
  • 1/4 cup maple syrup
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 tablespoon apple cider vinegar


Instructions

  1. Preheat your oven to 350°F (180°C) and grease a cake pan.
  2. In a mixing bowl, combine the dry ingredients: flour, brown sugar, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the wet ingredients: almond milk, oil, maple syrup, and apple cider vinegar.
