Ingredients
- 2 cups all-purpose flour
- 1 cup brown sugar
- 1 cup almond milk (or any plant-based milk)

- 1/2 cup chopped nuts (e.g., walnuts or pecans)
- 1/2 cup vegetable oil or coconut oil
- 1/4 cup maple syrup
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 tablespoon apple cider vinegar
Instructions
- Preheat your oven to 350°F (180°C) and grease a cake pan.
- In a mixing bowl, combine the dry ingredients: flour, brown sugar, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, mix the wet ingredients: almond milk, oil, maple syrup, and apple cider vinegar.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the dried fruits and nuts.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
