Description

Tender and juicy chicken thighs that are seared and baked for maximum flavor and a crispy exterior.


Ingredients

  • 2 pounds of bone-in, skin-on chicken thighs
  • 2 tablespoons of olive oil
  • 1 teaspoon of kosher salt
  • 1/2 teaspoon of ground black pepper
  • 1 teaspoon of onion powder
  • 1 teaspoon of garlic powder
  • 2 teaspoons of smoked paprika
  • 1 teaspoon of brown sugar
  • 1/4 teaspoon of red pepper flakes
  • 1/2 cup of chicken broth
  • 2 cloves of garlic, chopped


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken thighs dry with a paper towel.
  3. In a small bowl, mix together kosher salt, black pepper, onion powder, garlic powder, smoked paprika, brown sugar, and red pepper flakes.
  4. Drizzle the chicken thighs with olive oil and coat evenly.
  5. Sprinkle the spice mixture generously over the chicken thighs.
  6. Heat a large, oven-safe skillet over medium-high heat and sear the chicken thighs skin-side down for about 5 minutes. Flip and cook the other side for another 2 minutes.
  7. Add chicken broth and chopped garlic to the skillet.
  8. Transfer the skillet to the preheated oven and bake for 30 to 35 minutes, or until the internal temperature reaches 165°F (74°C).
  9. Let the chicken rest for about 5 minutes before serving.

Notes

For extra crispy skin, ensure the chicken is dry before seasoning. Letting the chicken come to room temperature before cooking can also improve even cooking.
