Description

A creamy and spiced eggnog that is low in carbs, perfect for holiday gatherings or cozy evenings at home.


Ingredients

  • 4 cups unsweetened almond milk
  • 3 large eggs
  • 1/2 cup erythritol or other low-carb sweetener
  • 1 teaspoon vanilla extract
  • 1 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • Optional: 1 cup rum or bourbon


Instructions

  1. In a blender, combine almond milk, eggs, sweetener, vanilla, nutmeg, and cinnamon.
  2. Blend until smooth.
  3. If using alcohol, stir in the rum or bourbon.
  4. Chill in the refrigerator for at least 120 minutes or serve immediately over ice.
  5. Garnish with additional nutmeg or cinnamon before serving.

Notes

For a thicker consistency, blend in some heavy cream or coconut cream. Adjust sweetness to your preference and use fresh ground spices for better flavor.
