Description
A creamy and spiced eggnog that is low in carbs, perfect for holiday gatherings or cozy evenings at home.
Ingredients
- 4 cups unsweetened almond milk
- 3 large eggs
- 1/2 cup erythritol or other low-carb sweetener
- 1 teaspoon vanilla extract
- 1 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- Optional: 1 cup rum or bourbon
Instructions
- In a blender, combine almond milk, eggs, sweetener, vanilla, nutmeg, and cinnamon.
- Blend until smooth.
- If using alcohol, stir in the rum or bourbon.
- Chill in the refrigerator for at least 120 minutes or serve immediately over ice.
- Garnish with additional nutmeg or cinnamon before serving.
Notes
For a thicker consistency, blend in some heavy cream or coconut cream. Adjust sweetness to your preference and use fresh ground spices for better flavor.
