Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 zucchini, chopped
- 1 bell pepper, chopped
- 1 can (14.5 ounces) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups spinach or kale, chopped
Instructions
- In a slow cooker, heat the olive oil and sauté the onions, carrots, and celery until softened.
- Add the garlic and cook for another minute.
- Add the zucchini, bell pepper, diced tomatoes (with their juice), vegetable broth, thyme, and basil.
- Season with salt and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Stir in the spinach or kale just before serving and let it wilt. Enjoy your warm vegetable soup!
