Description

A warm and comforting vegetable soup packed with nutrients, perfect for a busy day.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 zucchini, chopped
  • 1 bell pepper, chopped
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups spinach or kale, chopped


Instructions

  1. In a slow cooker, heat the olive oil and sauté the onions, carrots, and celery until softened.
  2. Add the garlic and cook for another minute.
  3. Add the zucchini, bell pepper, diced tomatoes (with their juice), vegetable broth, thyme, and basil.
  4. Season with salt and pepper.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Stir in the spinach or kale just before serving and let it wilt. Enjoy your warm vegetable soup!
