Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1 cup almond milk (or other plant-based milk)
- 1 cup mixed dried fruits (like raisins, currants, and chopped nuts)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a cake pan.
- In a large bowl, mix the flour, sugar, baking powder, baking soda, spices, and salt.
- In another bowl, combine the oil, almond milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the mixed dried fruits.
- Pour the batter into the prepared cake pan.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.
Notes
Serve dusted with powdered sugar or with dairy-free ice cream. Pairs well with hot beverages.
