Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 cup almond milk (or other plant-based milk)
  • 1 cup mixed dried fruits (like raisins, currants, and chopped nuts)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, mix the flour, sugar, baking powder, baking soda, spices, and salt.
  3. In another bowl, combine the oil, almond milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the mixed dried fruits.
  6. Pour the batter into the prepared cake pan.
  7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before serving.
