Ingredients

  • 4 chicken thighs or breasts
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable oil
  • 2 teaspoons tandoori spice mix
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 teaspoon paprika
  • Fresh cilantro for garnish


Instructions

  1. In a bowl, mix the yogurt, lemon juice, vegetable oil, tandoori spice mix, salt, garlic powder, ginger powder, and paprika until well combined.
  2. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes or overnight for more flavor.
  3. Preheat the oven to 400°F (200°C).
  4. Place the marinated chicken on a baking sheet lined with parchment paper.
  5. Bake for 25-30 minutes, or until the chicken is fully cooked and the juices run clear. Broil for an additional 2-3 minutes for a charred effect.
  6. Garnish with fresh cilantro and serve with rice or naan.

Notes

For best flavor, marinate the chicken overnight. You can use bone-in chicken thighs for more flavor and juiciness. Add extra spice for a hotter dish.
