Ingredients

  • 2 cups cooked rice (white, brown, or any variety)
  • 1 pound boneless, skinless chicken breasts
  • 1 cup sweet corn (fresh, frozen, or canned)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 avocado, sliced
  • 1 lime, cut into wedges
  • Fresh cilantro for garnish (optional)


Instructions

  1. Start by preparing the chicken. Season the boneless chicken breasts with garlic powder, paprika, salt, and pepper, ensuring each piece is evenly coated.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side or until they are golden brown and fully cooked through.
  3. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
  4. Add the sweet corn to the skillet and sauté for about 3-4 minutes until heated through and slightly caramelized.
  5. Assemble the bowls by placing a generous scoop of cooked rice at the base. Top with sliced chicken and sautéed corn.
  6. Add avocado slices on top and garnish with fresh cilantro if using. Serve with lime wedges on the side.

Notes
