Description

A creamy and flavorful pumpkin soup prepared effortlessly in a slow cooker, perfect for cozy dinners.


Ingredients

  • 2 cups pumpkin puree
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)


Instructions

  1. In a slow cooker, combine pumpkin puree, chopped onion, minced garlic, vegetable broth, coconut milk, cumin, paprika, and season with salt and pepper.
  2. Stir well to combine all ingredients.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Once cooked, use a hand blender to puree the soup until smooth.
  5. Taste and adjust seasoning if needed.
  6. Serve hot, garnished with fresh herbs if desired.

Notes
