Ingredients
- 2 cups pumpkin puree
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- In a slow cooker, combine pumpkin puree, chopped onion, minced garlic, vegetable broth, coconut milk, cumin, paprika, and season with salt and pepper.
- Stir well to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, use a hand blender to puree the soup until smooth.
- Taste and adjust seasoning if needed.
- Serve hot, garnished with fresh herbs if desired.
Notes
