Description
A comforting and hearty meatball soup made in a slow cooker, perfect for family dinners.
Ingredients
- 1 pound ground beef
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup green beans, chopped
- Fresh parsley for garnish
Instructions
- In a bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Form into meatballs.
- Place the meatballs in the slow cooker.
- Add beef broth, diced tomatoes, carrots, celery, and green beans to the slow cooker.
- Stir gently to combine.
- Cover and cook on low for 360-480 minutes or high for 180-240 minutes, until the meatballs are cooked through and vegetables are tender.
- Serve hot, garnished with fresh parsley.
Notes
For extra flavor, use homemade beef broth. You can replace ground beef with turkey or chicken for a lighter version.
