Description

A comforting and hearty meatball soup made in a slow cooker, perfect for family dinners.


Ingredients

  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup green beans, chopped
  • Fresh parsley for garnish


Instructions

  1. In a bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Form into meatballs.
  2. Place the meatballs in the slow cooker.
  3. Add beef broth, diced tomatoes, carrots, celery, and green beans to the slow cooker.
  4. Stir gently to combine.
  5. Cover and cook on low for 360-480 minutes or high for 180-240 minutes, until the meatballs are cooked through and vegetables are tender.
  6. Serve hot, garnished with fresh parsley.

Notes

For extra flavor, use homemade beef broth. You can replace ground beef with turkey or chicken for a lighter version.
