A comforting dish combining savory meat and veggies topped with creamy mashed potatoes, perfect for busy weeknights.
Ingredients
- 1 lb ground beef or lamb
- 1 onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup frozen peas
- 2 tablespoons tomato paste
- 1 cup beef broth
- 1 teaspoon Worcestershire sauce
- Salt and pepper to taste
- 4 cups mashed potatoes (prepared)
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
- Add the diced carrots and cook for a few more minutes.
- Add the ground beef or lamb to the skillet, breaking it apart with a spatula. Cook until browned.
- Stir in the tomato paste, beef broth, Worcestershire sauce, frozen peas, thyme, rosemary, salt, and pepper. Simmer for about 10 minutes.
- Pour the meat mixture into a baking dish.
- Spread the prepared mashed potatoes evenly on top of the meat layer.
- Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
- Let it cool for a few minutes before serving.
Notes
For best flavor, add a splash of red wine while cooking the meat. Can be made vegetarian by replacing meat with lentils or vegetables.
