Description

A comforting dish combining savory meat and veggies topped with creamy mashed potatoes, perfect for busy weeknights.


Ingredients

  • 1 lb ground beef or lamb
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 4 cups mashed potatoes (prepared)
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
  3. Add the diced carrots and cook for a few more minutes.
  4. Add the ground beef or lamb to the skillet, breaking it apart with a spatula. Cook until browned.
  5. Stir in the tomato paste, beef broth, Worcestershire sauce, frozen peas, thyme, rosemary, salt, and pepper. Simmer for about 10 minutes.
  6. Pour the meat mixture into a baking dish.
  7. Spread the prepared mashed potatoes evenly on top of the meat layer.
  8. Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
  9. Let it cool for a few minutes before serving.

Notes

For best flavor, add a splash of red wine while cooking the meat. Can be made vegetarian by replacing meat with lentils or vegetables.
