Description

A comforting pumpkin soup with creamy coconut milk and aromatic spices, perfect for chilly days.


Ingredients

  • 2 cups pumpkin puree
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tsp ground ginger
  • 1/2 tsp nutmeg
  • Salt and pepper to taste
  • Olive oil for sautéing


Instructions

  1. In a pot, heat olive oil over medium heat. Sauté onion and garlic until soft.
  2. Add pumpkin puree, ginger, nutmeg, salt, and pepper. Stir well.
  3. Pour in the vegetable broth and bring to a boil.
  4. Reduce heat, cover, and simmer for 20 minutes.
  5. Stir in coconut milk and blend until smooth.
  6. Serve hot, garnished with fresh herbs if desired.

Notes

For a chunkier texture, reserve some sautéed pumpkin and blend only half of the soup. Adjust spices to taste by adding cinnamon or curry powder for a unique twist.
