Description

Moist and flavorful pumpkin muffins that are perfect for any time of year, especially in the fall.


Ingredients

  • 1 cup canned pumpkin
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt


Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine pumpkin, sugar, oil, milk, and eggs until well blended.
  3. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool slightly before removing from the pan. Enjoy your muffins warm!

Notes

Make sure to measure your flour correctly. You can add nuts or chocolate chips for variety.
