Ingredients
- 1 cup canned pumpkin
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1/4 cup milk
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, combine pumpkin, sugar, oil, milk, and eggs until well blended.
- In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fill each muffin cup about 2/3 full with the batter.
- Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool slightly before removing from the pan. Enjoy your muffins warm!
Notes
Make sure to measure your flour correctly. You can add nuts or chocolate chips for variety.
