Ingredients
- 1 can of pumpkin puree
- 1 can of kidney beans, drained and rinsed
- 1 can of black beans, drained and rinsed
- 1 can of diced tomatoes
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 tablespoons of chili powder
- 1 tablespoon of cumin
- Salt and pepper to taste
- 3 cups of vegetable broth
- 1 bell pepper, chopped
- Olive oil for sautéing
Instructions
- In a large slow cooker, heat olive oil over medium heat and sauté the onions and garlic until translucent.
- Add the chopped bell pepper and sauté until softened.
- Stir in the pumpkin puree, beans, diced tomatoes, chili powder, cumin, salt, and pepper.
- Pour in the vegetable broth and mix well.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Adjust seasonings before serving. Enjoy your hearty pumpkin chili!
