Description

Ingredients

  • 1 can of pumpkin puree
  • 1 can of kidney beans, drained and rinsed
  • 1 can of black beans, drained and rinsed
  • 1 can of diced tomatoes
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of chili powder
  • 1 tablespoon of cumin
  • Salt and pepper to taste
  • 3 cups of vegetable broth
  • 1 bell pepper, chopped
  • Olive oil for sautéing


Instructions

  1. In a large slow cooker, heat olive oil over medium heat and sauté the onions and garlic until translucent.
  2. Add the chopped bell pepper and sauté until softened.
  3. Stir in the pumpkin puree, beans, diced tomatoes, chili powder, cumin, salt, and pepper.
  4. Pour in the vegetable broth and mix well.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Adjust seasonings before serving. Enjoy your hearty pumpkin chili!
