Description

A delicious and easy way to use overripe bananas, resulting in a moist and flavorful loaf.

Ingredients

  • 3 ripe bananas (mashed)
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 large egg (beaten)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan or line it with parchment paper.
  3. In a large bowl, mash the bananas with a fork until they’re smooth.
  4. Stir in the melted butter until well combined.
  5. Add the sugar, beaten egg, and vanilla extract to the banana mixture. Mix until fully blended.
  6. Sprinkle the baking soda and salt over the mixture and stir gently to incorporate.
  7. Pour in the flour and fold it into the mixture just until the flour disappears.
  8. Pour the batter into the prepared loaf pan and spread it evenly.
  9. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the banana bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

For added moisture, consider adding a tablespoon of yogurt or sour cream to the batter. Avoid overmixing to maintain a light texture.
