Description

A classic Italian minestrone soup that’s hearty, healthy, and perfect for any season.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 cup green beans, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups spinach
  • Grated Parmesan cheese (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Sauté for about 5 minutes until softened.
  2. Stir in the garlic and zucchini, cooking for an additional 2 minutes.
  3. Add the diced tomatoes, vegetable broth, cannellini beans, green beans, oregano, basil, salt, and pepper. Bring to a boil.
  4. Reduce the heat, cover, and simmer for 20 minutes.
  5. Stir in the spinach during the last few minutes until wilted.
  6. Serve hot, garnished with grated Parmesan cheese if desired.

Notes

Feel free to customize with your favorite vegetables or legumes. For a heartier option, add cooked pasta or small meatballs.
