Description
A classic Italian minestrone soup that’s hearty, healthy, and perfect for any season.
Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 cup green beans, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups spinach
- Grated Parmesan cheese (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Sauté for about 5 minutes until softened.
- Stir in the garlic and zucchini, cooking for an additional 2 minutes.
- Add the diced tomatoes, vegetable broth, cannellini beans, green beans, oregano, basil, salt, and pepper. Bring to a boil.
- Reduce the heat, cover, and simmer for 20 minutes.
- Stir in the spinach during the last few minutes until wilted.
- Serve hot, garnished with grated Parmesan cheese if desired.
Notes
Feel free to customize with your favorite vegetables or legumes. For a heartier option, add cooked pasta or small meatballs.
