  • 8 oz pasta of choice

  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened.
  3. Add the bell pepper and zucchini, cooking until tender.
  4. Stir in the black beans, corn, and taco seasoning, mixing well.
  5. Add the cooked pasta to the skillet, tossing to combine all ingredients. Season with salt and pepper to taste.
