Ingredients

1 lb ground beef (80/20 preferred)

1 tbsp olive oil

1 small onion, chopped

2 garlic cloves, minced

1 packet taco seasoning

1 can diced tomatoes (14 oz)

1 cup corn kernels (fresh or frozen)

1 can black beans, drained and rinsed

2 cups cooked white rice

1 cup shredded cheddar cheese

Fresh cilantro, chopped (for garnish)


Instructions

1. Heat olive oil in a large skillet over medium heat.

2. Add chopped onion and garlic, sauté for 2 minutes.

3. Add ground beef and cook until browned. Drain excess fat.

4. Stir in taco seasoning and cook for 1 minute.

5. Add diced tomatoes, corn, and black beans. Stir well.

6. Fold in the cooked rice and simmer for 5 minutes.

7. Sprinkle with cheddar cheese, cover until melted.

8. Garnish with fresh cilantro and serve.

Notes

You can add jalapeños for extra heat.
