Description

A quick and hearty one-pan dish made with ground beef, rice, and vegetables. Perfect for busy weeknights!


Ingredients

  • 1 lb lean ground beef
  • 1 cup rice
  • 2 cups beef broth
  • 1 cup bell peppers, diced
  • 1 cup onions, diced
  • 1 cup corn (frozen or fresh)
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. In a large skillet, heat a tablespoon of olive oil over medium heat. Add onions and garlic and sauté until soft.
  2. Add ground beef, cooking until browned. Drain excess fat if necessary.
  3. Stir in bell peppers, corn, and spices. Cook for about 5 minutes.
  4. Add rice and beef broth, bringing to a simmer.
  5. Cover and cook for 20 minutes or until rice is tender.
  6. Fluff with a fork and serve warm.
