Description

A delicious and healthy carrot cake that is flourless and naturally sweetened, perfect for any occasion.


Ingredients

  • 2 eggs
  • ½ cup honey
  • 2 carrots, shredded
  • 1 cup oats
  • ½ tsp baking soda
  • 1 tbsp cinnamon
  • ¼ cup butter, room temperature
  • 1 tsp vanilla


Instructions

  1. Preheat your oven to 180°C (300°F).
  2. Combine all ingredients except the shredded carrot in a bowl and blend using an immersion blender until smooth.
  3. Stir in the shredded carrot until well incorporated.
  4. Line a small baking pan (around 7×7 inches, or 18 cm) with parchment paper and spread the mixture evenly in the pan.
  5. Bake for 20 to 30 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool before slicing. Enjoy!

Notes

For added flavor, consider adding nuts, spices, or chocolate chips. Serve with cream cheese frosting or yogurt.
