A delicious and healthy carrot cake that is flourless and naturally sweetened, perfect for any occasion.
Ingredients
- 2 eggs
- ½ cup honey
- 2 carrots, shredded
- 1 cup oats
- ½ tsp baking soda
- 1 tbsp cinnamon
- ¼ cup butter, room temperature
- 1 tsp vanilla
Instructions
- Preheat your oven to 180°C (300°F).
- Combine all ingredients except the shredded carrot in a bowl and blend using an immersion blender until smooth.
- Stir in the shredded carrot until well incorporated.
- Line a small baking pan (around 7×7 inches, or 18 cm) with parchment paper and spread the mixture evenly in the pan.
- Bake for 20 to 30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool before slicing. Enjoy!
Notes
For added flavor, consider adding nuts, spices, or chocolate chips. Serve with cream cheese frosting or yogurt.
