Ingredients

  • 2 cups cooked, shredded or diced chicken breast

  • 1 ½ cups shredded cheese (Monterey Jack + Cheddar blend recommended)

  • 4 medium flour tortillas (810 inch)

  • 1 tbsp olive oil or butter

  • 1 tsp chili powder

  • ½ tsp cumin

  • ½ tsp garlic powder

  • Salt and pepper to taste

  • Optional add-ins: sautéed bell peppers, onions, corn, or jalapeños


Instructions

  1. Season the Chicken:
    In a bowl, mix chicken with chili powder, cumin, garlic powder, salt, and pepper.

  2. Assemble the Quesadillas:
    Lay tortillas flat. On one half, layer seasoned chicken and cheese. Fold over into a half-moon.

  3. Cook:

    • Stovetop: Heat oil/butter in a skillet over medium heat. Cook each quesadilla for 2–3 minutes per side until golden and crispy, and cheese is melted.

    • Oven: Bake at 400°F (200°C) for 8–10 minutes, flipping halfway.

    • Air Fryer: Cook at 390°F (200°C) for 6–8 minutes, flipping once.

  4. Serve:
    Slice into wedges and serve with salsa, sour cream, or guacamole.

Notes

  • Use leftover rotisserie chicken to save time.

  • For vegetarian quesadillas, substitute with black beans or sautéed veggies.
