Ingredients
2 cups cooked, shredded or diced chicken breast
1 ½ cups shredded cheese (Monterey Jack + Cheddar blend recommended)
4 medium flour tortillas (8–10 inch)
1 tbsp olive oil or butter
1 tsp chili powder
½ tsp cumin
½ tsp garlic powder
Salt and pepper to taste
Optional add-ins: sautéed bell peppers, onions, corn, or jalapeños
Instructions
Season the Chicken:
In a bowl, mix chicken with chili powder, cumin, garlic powder, salt, and pepper.Assemble the Quesadillas:
Lay tortillas flat. On one half, layer seasoned chicken and cheese. Fold over into a half-moon.Cook:
Stovetop: Heat oil/butter in a skillet over medium heat. Cook each quesadilla for 2–3 minutes per side until golden and crispy, and cheese is melted.
Oven: Bake at 400°F (200°C) for 8–10 minutes, flipping halfway.
Air Fryer: Cook at 390°F (200°C) for 6–8 minutes, flipping once.
Serve:
Slice into wedges and serve with salsa, sour cream, or guacamole.
Notes
Use leftover rotisserie chicken to save time.
For vegetarian quesadillas, substitute with black beans or sautéed veggies.
Quesadillas can be made ahead and stored in the fridge for 3 days or frozen for up to a month.
