Description

A delightful one-pot meal that combines chicken, beans, and hearty vegetables for a comforting and satisfying dish.


Ingredients

  • 1 lb chicken thighs
  • 1 can white beans
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, chopped
  • 1 stalk celery, chopped
  • 2 cups chicken broth
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chicken thighs and brown on both sides. Remove and set aside.
  3. In the same pot, add onion, garlic, carrot, and celery. Sauté until onions are translucent.
  4. Stir in the tomatoes, beans, chicken broth, thyme, bay leaf, salt, and pepper.
  5. Return the chicken to the pot.
  6. Bring to a simmer, cover, and cook for about 30 minutes, until chicken is cooked through.
  7. Remove bay leaf before serving. Enjoy your easy chicken cassoulet!
