A delightful one-pot meal that combines chicken, beans, and hearty vegetables for a comforting and satisfying dish.
Ingredients
- 1 lb chicken thighs
- 1 can white beans
- 1 cup diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, chopped
- 1 stalk celery, chopped
- 2 cups chicken broth
- 1 tsp thyme
- 1 bay leaf
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chicken thighs and brown on both sides. Remove and set aside.
- In the same pot, add onion, garlic, carrot, and celery. Sauté until onions are translucent.
- Stir in the tomatoes, beans, chicken broth, thyme, bay leaf, salt, and pepper.
- Return the chicken to the pot.
- Bring to a simmer, cover, and cook for about 30 minutes, until chicken is cooked through.
- Remove bay leaf before serving. Enjoy your easy chicken cassoulet!
Notes
Serve with crusty bread or fresh herbs. Store leftovers in an airtight container for 3-4 days or freeze for up to 2 months.
