Description

Ingredients

  • 1 butternut squash, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Optional toppings: cream, croutons, parsley


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and garlic; sauté until softened.
  3. Add the cubed butternut squash and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer until squash is tender, about 20-25 minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Season with salt and pepper.
