Ingredients
- 1 butternut squash, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon olive oil
- Salt and pepper to taste
- Optional toppings: cream, croutons, parsley
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and garlic; sauté until softened.
- Add the cubed butternut squash and vegetable broth. Bring to a boil.
- Reduce heat and simmer until squash is tender, about 20-25 minutes.
- Use an immersion blender to puree the soup until smooth.
- Season with salt and pepper.
- Serve hot, garnishing with cream or croutons if desired.
Notes
Store leftovers in an airtight container in the refrigerator for 4-5 days. Can be frozen for up to 3 months.
