Description
Delicious and hearty breakfast potatoes that are crispy on the outside and fluffy on the inside, perfect as a breakfast side dish.
Ingredients
- 4 Potatoes (cut into 1/2″ cubes)
- 1/4 tsp Salt
- 1/4 tsp Black Pepper
- 1/4 tsp Garlic Powder
- 1/4 tsp Onion Powder
- 1 tbsp Butter
- 1 tbsp Oil
- 1 tbsp Chopped Parsley (fresh, or 1/2 tsp dried)
Instructions
- Cut all potatoes into small 1/2″ cubes.
- Heat a skillet over medium-high heat and add the butter and oil.
- Add the chopped potatoes to the skillet and toss to coat in the butter and oil.
- Sprinkle with salt, black pepper, garlic powder, and onion powder, reserving the parsley for later.
- Cover the skillet and let the potatoes steam for about 3-4 minutes.
- Remove the lid and stir the potatoes to ensure even cooking. Continue cooking uncovered, turning the potatoes with a spatula.
- Once done, the potatoes should have a light crisp outside and be soft inside.
- Sprinkle with fresh parsley and serve warm.
Notes
For extra crispiness, pre-soak the potatoes in cold water for 30 minutes and avoid overcrowding the pan while cooking.
