Description

Delicious and hearty breakfast potatoes that are crispy on the outside and fluffy on the inside, perfect as a breakfast side dish.


Ingredients

  • 4 Potatoes (cut into 1/2″ cubes)
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1 tbsp Butter
  • 1 tbsp Oil
  • 1 tbsp Chopped Parsley (fresh, or 1/2 tsp dried)


Instructions

  1. Cut all potatoes into small 1/2″ cubes.
  2. Heat a skillet over medium-high heat and add the butter and oil.
  3. Add the chopped potatoes to the skillet and toss to coat in the butter and oil.
  4. Sprinkle with salt, black pepper, garlic powder, and onion powder, reserving the parsley for later.
  5. Cover the skillet and let the potatoes steam for about 3-4 minutes.
  6. Remove the lid and stir the potatoes to ensure even cooking. Continue cooking uncovered, turning the potatoes with a spatula.
  7. Once done, the potatoes should have a light crisp outside and be soft inside.
  8. Sprinkle with fresh parsley and serve warm.

Notes

For extra crispiness, pre-soak the potatoes in cold water for 30 minutes and avoid overcrowding the pan while cooking.
