A nutritious and quick breakfast option combining oats and apples, perfect for a busy morning.
Ingredients
- 1 cup oats
- 1 large apple, peeled and chopped
- 3 tbsp honey
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 3 tbsp yogurt (dairy-free option available)
- 2 eggs (flaxseed eggs for vegan option)
- 1 tbsp butter or coconut oil (coconut oil for dairy-free)
Instructions
- Preheat your oven to 180°C (350°F).
- Place all ingredients, except for 1/4 of the oats, into a blender or a mixing bowl and process until smooth.
- Stir in the remaining oats until well-combined.
- Line a small baking pan with parchment paper and pour the mixture in, spreading it evenly.
- Bake in the preheated oven for 20–30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely before slicing and refrigerate for at least one hour before serving.
Notes
For best texture, avoid overmixing and allow the cake to chill before slicing.
