Description

A delightful breakfast sandwich combining creamy cheese and savory sausage for a hearty meal.


Ingredients

  • ½ pound ground chicken breakfast sausage
  • 6 large eggs, beaten
  • 8 slices Colby-Jack cheese
  • 4 tablespoons soft butter, divided
  • 8 slices sourdough bread
  • Optional: tomato slices, spinach, avocado, or mayonnaise


Instructions

  1. Cook the ground chicken sausage in a skillet over medium heat until browned. Transfer to a paper towel-lined bowl to absorb excess grease.
  2. Melt 2 tablespoons of butter in the same skillet, add the beaten eggs, and scramble until just set. Stir in the cooked sausage.
  3. Butter one side of each slice of bread. In the skillet, place one slice of bread buttered side down, layer with a slice of cheese, the sausage-egg mix, another slice of cheese, and top with a second slice of bread (buttered side up).
  4. Cook over medium heat for about 3–4 minutes on each side until the bread is golden brown and cheese has melted.
  5. Remove the sandwich, let it rest for one minute, slice in half, and serve warm.
