A delightful breakfast sandwich combining creamy cheese and savory sausage for a hearty meal.
Ingredients
- ½ pound ground chicken breakfast sausage
- 6 large eggs, beaten
- 8 slices Colby-Jack cheese
- 4 tablespoons soft butter, divided
- 8 slices sourdough bread
- Optional: tomato slices, spinach, avocado, or mayonnaise
Instructions
- Cook the ground chicken sausage in a skillet over medium heat until browned. Transfer to a paper towel-lined bowl to absorb excess grease.
- Melt 2 tablespoons of butter in the same skillet, add the beaten eggs, and scramble until just set. Stir in the cooked sausage.
- Butter one side of each slice of bread. In the skillet, place one slice of bread buttered side down, layer with a slice of cheese, the sausage-egg mix, another slice of cheese, and top with a second slice of bread (buttered side up).
- Cook over medium heat for about 3–4 minutes on each side until the bread is golden brown and cheese has melted.
- Remove the sandwich, let it rest for one minute, slice in half, and serve warm.
