Description

This effortless crockpot teriyaki chicken combines chicken, teriyaki sauce, and vegetables for a quick family dinner that requires minimal preparation.


Ingredients

  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 cup bottled teriyaki sauce
  • 2 tbsp soy sauce
  • 2 tbsp honey or brown sugar
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 cup pineapple chunks
  • 1 piece bell pepper, sliced


Instructions

  1. Place the chicken in the bottom of the crockpot.
  2. In a separate bowl, mix together teriyaki sauce, soy sauce, honey, minced garlic, and grated ginger.
  3. Pour the sauce mixture over the chicken, ensuring it is well-coated.
  4. Add pineapple chunks and sliced bell pepper on top of the chicken.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Once cooked, shred the chicken in the crockpot or serve whole with sauce poured over the top.

Notes

For a healthier option, use low-sodium teriyaki sauce. Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
