A delicious and effortless meal combining succulent chicken, fluffy rice, and creamy tzatziki sauce all in one baking dish.
Ingredients
- 2 cups Long Grain White Rice
- 4 cups Chicken Broth
- 2 pieces Boneless, Skinless Chicken Breasts
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 cup Greek Yogurt
- 2 cloves Minced Garlic
- 1 cup Grated Cucumber
- 2 tablespoons Dill
- 2 tablespoons Lemon Juice
- 1 teaspoon Oregano
- 1 teaspoon Paprika
- 1 cup Cucumber Substitute (Diced zucchini or bell pepper)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large baking dish, combine the rice with the chicken broth and stir well.
- Place the chicken breasts on top of the rice, drizzle with olive oil, and season with salt, black pepper, and paprika.
- Cover with aluminum foil and bake for 40-45 minutes until the chicken is cooked and the rice is tender.
- Prepare the tzatziki sauce by mixing Greek yogurt, minced garlic, grated cucumber, dill, lemon juice, oregano, and salt in a bowl.
- Once cooked, remove the dish from the oven, fluff the rice, slice the chicken, return it to the dish, and spoon the tzatziki sauce over top.
Notes
Squeeze excess moisture from cucumbers for tzatziki. Use chicken broth for flavorful rice. Let the dish rest for a few minutes before serving.
