Description

A delightful pasta salad that combines the crunch of pickles, smokiness of bacon, and creaminess of a special dressing, perfect for gatherings.


Ingredients

  • 1 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 1/4 cup Pickle Brine
  • 1 tablespoon Yellow Mustard
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Sugar
  • 8 slices Bacon
  • 8 ounces Short Pasta
  • 1 cup Pickles
  • 1 cup Mini Cucumbers
  • 1 cup Mild Cheese
  • 1/2 cup Red Onions
  • 1/4 cup Fresh Dill
  • Salt and Pepper, to taste


Instructions

  1. Cook the Pasta: Begin by boiling a large pot of salted water. Add the short pasta and cook according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
  2. Prepare the Bacon: While the pasta cooks, crispy up the bacon in a skillet over medium heat. Cook until evenly browned and crispy, then remove and let it drain on a paper towel. Once cooled, crumble the bacon into small pieces.
  3. Make the Dressing: In a large bowl, combine the mayonnaise, sour cream, pickle brine, yellow mustard, kosher salt, and sugar. Whisk until smooth and creamy.
  4. Combine Ingredients: In the same bowl, add the cooked pasta, crumbled bacon, pickles, mini cucumbers, mild cheese, red onions, and fresh dill. Gently fold everything together until well coated with the dressing.
  5. Season to Taste: Taste the pasta salad and add salt and pepper as needed. Adjust the seasoning based on your preference.
  6. Chill and Serve: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving. This allows the flavors to meld together beautifully.
