Ingredients
- 4 chicken thighs
- 1 cup chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour (or gluten-free flour)
- 1 cup milk
- Salt and pepper to taste
- 2 tablespoons cooking oil
- Fresh parsley for garnish
Instructions
- Season the chicken thighs with salt and pepper.
- In a large skillet, heat the cooking oil over medium-high heat.
- Add the chicken and cook until browned on all sides, about 5 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced onion and minced garlic; sauté until softened.
- Sprinkle the flour over the onion mixture and stir to combine, cooking for 2 minutes.
- Gradually whisk in the chicken broth and milk, bringing the mixture to a simmer.
- Return the chicken to the skillet, cover, and reduce heat to low.
- Let it simmer for 30-40 minutes, or until chicken is cooked through and tender.
- Serve the smothered chicken with gravy over rice or mashed potatoes, garnished with fresh parsley.
Notes
For a spicy twist, add diced jalapeños or red pepper flakes. This recipe can also be cooked in a slow cooker for added convenience.
