Description

Ingredients

  • 4 chicken thighs
  • 1 cup chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour (or gluten-free flour)
  • 1 cup milk
  • Salt and pepper to taste
  • 2 tablespoons cooking oil
  • Fresh parsley for garnish


Instructions

  1. Season the chicken thighs with salt and pepper.
  2. In a large skillet, heat the cooking oil over medium-high heat.
  3. Add the chicken and cook until browned on all sides, about 5 minutes per side.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the diced onion and minced garlic; sauté until softened.
  6. Sprinkle the flour over the onion mixture and stir to combine, cooking for 2 minutes.
  7. Gradually whisk in the chicken broth and milk, bringing the mixture to a simmer.
  8. Return the chicken to the skillet, cover, and reduce heat to low.
  9. Let it simmer for 30-40 minutes, or until chicken is cooked through and tender.
  10. Serve the smothered chicken with gravy over rice or mashed potatoes, garnished with fresh parsley.

Notes

For a spicy twist, add diced jalapeños or red pepper flakes. This recipe can also be cooked in a slow cooker for added convenience.
