Description

An easy, one-pan meal featuring juicy chicken and vibrant vegetables, perfect for weeknight dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups of mixed vegetables (bell peppers, zucchini, carrots, or your favorites)
  • 4 tablespoons of olive oil
  • 2 teaspoons of garlic powder
  • 2 teaspoons of paprika
  • 1 teaspoon of dried thyme (or fresh, if available)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper for easy cleanup.
  3. In a small bowl, whisk together olive oil, garlic powder, paprika, thyme, salt, and pepper.
  4. Place the chicken breasts on the sheet pan and brush them generously with the olive oil mixture.
  5. Add mixed vegetables to the tray and drizzle the remaining olive oil over them. Toss to coat.
  6. Arrange the seasoned chicken in the center of the sheet pan, surrounded by the vegetables.
  7. Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  8. Once cooked through, remove from the oven and let the chicken rest for a few minutes before slicing.
  9. Serve garnished with fresh parsley if desired.
