Ingredients
1-2 lbs firm white fish (cod, halibut, or sea bass)
1 lb oily fish (salmon, mackerel, or sardines)
1-2 lbs assorted shellfish (mussels, clams, shrimp, or squid)
2 large onions
4-6 garlic cloves
1 (28 oz) can diced tomatoes
1/2 cup chopped fresh herbs (parsley, thyme, oregano)
1-2 tsp each of paprika, saffron, fennel seeds
2 tablespoons olive oil
2 cups fish or vegetable stock
1 cup dry white wine
1 bay leaf
Salt and pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Sauté onions until translucent.
2. Add garlic and cook for 1 minute. Stir in tomatoes, white wine, stock, bay leaf, herbs, and spices.
3. Simmer the base for 15–20 minutes to develop flavor.
4. Add fish and shellfish in stages, starting with firm white fish. Simmer gently until cooked through.
5. Remove bay leaf, season with salt and pepper, and stir in fresh herbs before serving.
6. Serve hot with crusty bread or salad.
Notes
To prep ahead, cook the stew base and refrigerate it before adding seafood later.
