A versatile and healthy crustless quiche made with creamy ricotta and fresh spinach, perfect for any meal of the day.
Ingredients
- 2 cups chopped fresh spinach
- 1 cup ricotta cheese
- 3 large eggs
- 1/2 cup milk
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/4 teaspoon nutmeg (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat the olive oil over medium heat and sauté the chopped spinach until wilted.
- In a mixing bowl, combine the ricotta cheese, eggs, milk, Parmesan cheese, garlic powder, onion powder, nutmeg (if using), salt, and pepper.
- Stir in the sautéed spinach.
- Pour the mixture into a greased pie dish.
- Bake for 35-40 minutes or until set and lightly golden on top.
- Allow to cool slightly before slicing and serving.
Notes
For best results, use fresh spinach and properly grease your baking dish. Customize the cheese or add additional vegetables to suit your taste.
