Description

A delightful blend of sweet and spicy flavors, this Crunchy Hot Honey Chicken features a crispy cornflake coating and a decadent hot honey glaze.

Ingredients

  • 6 cups cornflakes
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 2 large eggs, beaten
  • 2 tablespoons hot sauce
  • 2 pounds chicken breast tenderloins
  • Olive oil for drizzling
  • 1/2 cup honey
  • 2 1/2 tablespoons hot sauce
  • 2 teaspoons cayenne pepper
  • 3/4 teaspoon chipotle chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. Prepare the chicken by ensuring the tenderloins are of uniform size. Set up two shallow dishes—one for the egg wash (beaten eggs mixed with hot sauce) and another for the dry coating (cornflakes, parmesan cheese, smoked paprika, onion powder, and garlic powder).
  2. Coat the chicken by dipping each tenderloin in the egg wash and then the cornflake mixture. For an extra crunch, repeat the egg wash and coating process.
  3. Preheat the oven to 400°F (200°C). Lightly drizzle a baking sheet with olive oil and arrange the chicken in a single layer. Drizzle olive oil on top of the chicken. Bake for 20-25 minutes, flipping halfway, until golden brown.
  4. Make the hot honey sauce by combining honey, hot sauce, cayenne pepper, chipotle chili powder, garlic powder, and onion powder in a small saucepan over medium-low heat. Stir until smooth and simmer for 2-3 minutes.
  5. Remove chicken from the oven, transfer to a bowl, pour the hot honey sauce over, and toss to coat evenly. Serve immediately.

Notes

For a crunchier texture, double dip the chicken in the egg wash and cornflake mixture. Adjust hot sauce amounts for desired spiciness.
