Description

Deliciously soft and chewy cookies infused with the flavors of classic pecan pie, perfect for any occasion.


Ingredients

  • 1/2 cup butter (softened)
  • 1/3 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 1 tsp vanilla extract
  • 2 1/3 cup flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 5 tbsp butter
  • 2/3 cup brown sugar
  • 1 1/4 cup chopped pecans
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt


Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper. Set it aside.
  2. In a large mixing bowl, cream together the softened butter, oil, granulated sugar, and powdered sugar until smooth.
  3. Add the egg and vanilla extract, mixing until combined.
  4. Gradually add the flour, salt, and baking powder. Mix until the dough comes together.
  5. Scoop out 9 equally sized cookie balls using a large cookie scooper and place them on the prepared baking sheet.
  6. Gently flatten each cookie to about 1 inch in thickness, creating space for the pecan pie filling by pressing down the center with a 1/4 measuring cup.
  7. Bake the cookies for 8-9 minutes, then allow them to cool on the baking sheet.

Notes

Serve warm with milk or vanilla ice cream. Store in an airtight container for up to a week.
