Deliciously soft and chewy cookies infused with the flavors of classic pecan pie, perfect for any occasion.
Ingredients
- 1/2 cup butter (softened)
- 1/3 cup vegetable or canola oil
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar
- 1 egg (at room temperature)
- 1 tsp vanilla extract
- 2 1/3 cup flour
- 1/4 tsp salt
- 1 tsp baking powder
- 5 tbsp butter
- 2/3 cup brown sugar
- 1 1/4 cup chopped pecans
- 1/3 cup heavy cream
- 1/4 tsp cinnamon
- 1 pinch nutmeg
- 1 pinch salt
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper. Set it aside.
- In a large mixing bowl, cream together the softened butter, oil, granulated sugar, and powdered sugar until smooth.
- Add the egg and vanilla extract, mixing until combined.
- Gradually add the flour, salt, and baking powder. Mix until the dough comes together.
- Scoop out 9 equally sized cookie balls using a large cookie scooper and place them on the prepared baking sheet.
- Gently flatten each cookie to about 1 inch in thickness, creating space for the pecan pie filling by pressing down the center with a 1/4 measuring cup.
- Bake the cookies for 8-9 minutes, then allow them to cool on the baking sheet.
Notes
Serve warm with milk or vanilla ice cream. Store in an airtight container for up to a week.
