Ingredients
- 2 medium sweet potatoes, peeled and diced
- 1 cup dried green or brown lentils, rinsed
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, with juices
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 2 cups kale, chopped
- Fresh parsley, for garnish
Instructions
- In a crockpot, combine sweet potatoes, lentils, onion, carrots, celery, garlic, diced tomatoes, vegetable broth, cumin, smoked paprika, turmeric, salt, and pepper. Stir to mix well.
- Cover and cook on low for 360 minutes (6-8 hours) or on high for 180 minutes (3-4 hours), until lentils and sweet potatoes are tender.
- Stir in chopped kale about 30 minutes before serving, allowing it to wilt.
- Serve hot, garnished with fresh parsley.

Store in an airtight container in the fridge for 3-5 days, or freeze for up to three months. Add a squeeze of lemon juice or hot sauce for extra flavor.
