Description

A delicious and nutritious stew packed with sweet potatoes, lentils, and kale, perfect for a comforting meal with minimal effort.


Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 cup dried green or brown lentils, rinsed
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 2 cups kale, chopped
  • Fresh parsley, for garnish


Instructions

  1. In a crockpot, combine sweet potatoes, lentils, onion, carrots, celery, garlic, diced tomatoes, vegetable broth, cumin, smoked paprika, turmeric, salt, and pepper. Stir to mix well.
  2. Cover and cook on low for 360 minutes (6-8 hours) or on high for 180 minutes (3-4 hours), until lentils and sweet potatoes are tender.
  3. Stir in chopped kale about 30 minutes before serving, allowing it to wilt.
  4. Serve hot, garnished with fresh parsley.

Notes

Store in an airtight container in the fridge for 3-5 days, or freeze for up to three months. Add a squeeze of lemon juice or hot sauce for extra flavor.
