Description

A delightful and hearty casserole that combines smoked sausage, hash browns, and cheese, perfect for busy families and gatherings.


Ingredients

  • 1 tablespoon butter
  • 2 tablespoons flour
  • 1 cup water
  • 1 cup whole milk
  • 2 teaspoons chicken bouillon paste
  • 1/2 teaspoon thyme
  • 1/2 teaspoon poultry seasoning
  • Salt (to taste)
  • Black pepper (to taste)
  • 32 oz hash browns (1 bag)
  • 14 oz smoked sausage (diced)
  • 1 small onion (diced)
  • 1 1/2 cups cheddar cheese (grated + more for right before serving)
  • 2 tablespoons chives (fresh, chopped for garnish, optional)


Instructions

  1. Begin by melting the butter in a small saucepan over low heat. Sprinkle in the flour and whisk well. Allow it to cook for about a minute.
  2. Gradually stir in the water while whisking to eliminate any lumps. Let the mixture simmer until it thickens, then stir in the whole milk, chicken bouillon paste, thyme, poultry seasoning, and any additional salt and pepper to taste. Set this mixture aside.
  3. In a lightly greased crockpot, combine the hash browns, diced smoked sausage, diced onion, and grated cheddar cheese. Pour your prepared condensed soup over the top and stir until everything is well-coated.
  4. Cover the crockpot and cook on high for about 180 minutes or until the hash browns are soft and the smoked sausage is heated through. If desired, sprinkle a little more cheese on top before serving.

Notes

For a richer flavor, brown the smoked sausage before adding it to the crockpot. Use frozen hash browns for best results. Adjust seasonings to taste.
