A fantastic comfort food that combines tender ground beef and vegetables under a delicious layer of mashed potatoes, made easy in a crockpot.
Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup frozen peas
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 4 cups mashed potatoes (prepared)
- 1 cup beef broth
Instructions
- Brown the ground beef in a skillet over medium heat, then drain excess fat.
- In a crockpot, combine the browned beef, onion, garlic, carrots, celery, frozen peas, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
- Pour in the beef broth and mix well.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Spread the prepared mashed potatoes on top of the beef mixture in the crockpot and cook for an additional 30 minutes until heated through.
- Serve hot.
Notes
For added flair, feel free to add extra veggies like corn or green beans. Using leftover mashed potatoes can save time, and if you prefer a crispy topping, broil the mashed potatoes for a few minutes post-cooking.
