Description

A fantastic comfort food that combines tender ground beef and vegetables under a delicious layer of mashed potatoes, made easy in a crockpot.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup frozen peas
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 4 cups mashed potatoes (prepared)
  • 1 cup beef broth


Instructions

  1. Brown the ground beef in a skillet over medium heat, then drain excess fat.
  2. In a crockpot, combine the browned beef, onion, garlic, carrots, celery, frozen peas, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
  3. Pour in the beef broth and mix well.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Spread the prepared mashed potatoes on top of the beef mixture in the crockpot and cook for an additional 30 minutes until heated through.
  6. Serve hot.

Notes

For added flair, feel free to add extra veggies like corn or green beans. Using leftover mashed potatoes can save time, and if you prefer a crispy topping, broil the mashed potatoes for a few minutes post-cooking.
