Description

A delicious and comforting roasted garlic potato soup that cooks slowly in a crockpot, making it perfect for any time of the year.


Ingredients

  • 2 pounds potatoes, peeled and diced
  • 1 head of garlic, roasted
  • 1 onion, chopped
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or milk
  • Salt and pepper to taste
  • Chives or parsley for garnish


Instructions

  1. Place the diced potatoes, roasted garlic, chopped onion, and broth in the crockpot.
  2. Cook on low for 360 minutes (6 hours) or high for 240 minutes (4 hours) until the potatoes are tender.
  3. Use an immersion blender to puree the soup until smooth.
  4. Stir in the heavy cream or milk and season with salt and pepper.
  5. Serve hot, garnished with chives or parsley.

Notes

For a thicker soup, add an extra potato or blend a portion and stir it back in. Customize with your favorite veggies or spices.
