A delicious and comforting roasted garlic potato soup that cooks slowly in a crockpot, making it perfect for any time of the year.
Ingredients
- 2 pounds potatoes, peeled and diced
- 1 head of garlic, roasted
- 1 onion, chopped
- 4 cups vegetable or chicken broth
- 1 cup heavy cream or milk
- Salt and pepper to taste
- Chives or parsley for garnish
Instructions
- Place the diced potatoes, roasted garlic, chopped onion, and broth in the crockpot.
- Cook on low for 360 minutes (6 hours) or high for 240 minutes (4 hours) until the potatoes are tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream or milk and season with salt and pepper.
- Serve hot, garnished with chives or parsley.
Notes
For a thicker soup, add an extra potato or blend a portion and stir it back in. Customize with your favorite veggies or spices.
