A hearty and comforting lasagna-inspired soup made in a slow cooker, perfect for busy days.
Ingredients
- 1 pound ground beef or Italian sausage
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cans (15 oz each) tomato sauce
- 1 can (12 oz) diced tomatoes
- 4 cups chicken or vegetable broth
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 ounces lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- Parmesan cheese for topping
- Fresh basil or parsley for garnish
Instructions
- In a large skillet, brown the ground beef or sausage with the diced onion and minced garlic. Drain excess fat.
- Transfer the meat mixture to the crockpot and add tomato sauce, diced tomatoes, broth, Italian seasoning, salt, and pepper. Stir to combine.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, add the broken lasagna noodles to the soup.
- Stir in the ricotta cheese until well combined.
- Before serving, sprinkle with shredded mozzarella cheese and allow to melt.
- Serve hot, topped with Parmesan cheese and fresh herbs if desired.
Notes
Feel free to add extra vegetables or adjust spices to your taste. Use no-boil lasagna noodles to save time.
