Description

A hearty and comforting lasagna-inspired soup made in a slow cooker, perfect for busy days.


Ingredients

  • 1 pound ground beef or Italian sausage
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cans (15 oz each) tomato sauce
  • 1 can (12 oz) diced tomatoes
  • 4 cups chicken or vegetable broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • Parmesan cheese for topping
  • Fresh basil or parsley for garnish


Instructions

  1. In a large skillet, brown the ground beef or sausage with the diced onion and minced garlic. Drain excess fat.
  2. Transfer the meat mixture to the crockpot and add tomato sauce, diced tomatoes, broth, Italian seasoning, salt, and pepper. Stir to combine.
  3. Cook on low for 6-8 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, add the broken lasagna noodles to the soup.
  5. Stir in the ricotta cheese until well combined.
  6. Before serving, sprinkle with shredded mozzarella cheese and allow to melt.
  7. Serve hot, topped with Parmesan cheese and fresh herbs if desired.

Notes

Feel free to add extra vegetables or adjust spices to your taste. Use no-boil lasagna noodles to save time.
