Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 2 cups potatoes, diced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup frozen corn
- 1 cup green beans, chopped
- Fresh parsley for garnish
Instructions
- In a large skillet, brown the ground beef over medium heat. Drain the excess fat.
- Transfer the cooked beef to a crockpot. Add the chopped onion, minced garlic, diced carrots, diced celery, and chopped bell pepper.
- Stir in the diced tomatoes, beef broth, diced potatoes, Italian seasoning, salt, pepper, frozen corn, and green beans.
- Cover and cook on low for 360-480 minutes or on high for 240-300 minutes.
- Once cooked, garnish with fresh parsley before serving.
