Description

A delightful and comforting soup packed with vegetables and protein, perfect for busy families.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 2 cups potatoes, diced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup frozen corn
  • 1 cup green beans, chopped
  • Fresh parsley for garnish


Instructions

  1. In a large skillet, brown the ground beef over medium heat. Drain the excess fat.
  2. Transfer the cooked beef to a crockpot. Add the chopped onion, minced garlic, diced carrots, diced celery, and chopped bell pepper.
  3. Stir in the diced tomatoes, beef broth, diced potatoes, Italian seasoning, salt, pepper, frozen corn, and green beans.
  4. Cover and cook on low for 360-480 minutes or on high for 240-300 minutes.
  5. Once cooked, garnish with fresh parsley before serving.
