Flavorful and easy Crockpot Fajitas made with tender meat and colorful vegetables, perfect for busy families.
Ingredients
- 1 lb chicken breast or beef strips
- 1-2 bell peppers, sliced
- 1 medium onion, sliced
- 1 packet fajita seasoning (or homemade blend)
- 2 tablespoons lime juice (optional)
- 1 tablespoon olive oil (optional)
- 1 cup diced tomatoes or tomato sauce (optional)
- Tortillas, rice, or toppings of choice
Instructions
- Place the chicken or beef at the bottom of the crockpot.
- Layer the sliced onions and bell peppers on top.
- Sprinkle fajita seasoning over everything.
- Add lime juice, olive oil, or tomatoes if you prefer a juicier dish.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once done, shred the chicken or beef with two forks and stir everything together.
- Serve with tortillas, rice, or other sides.
Notes
Squeeze fresh lime juice before serving for brightness. Use a mix of peppers for color.
