Description

Flavorful and easy Crockpot Fajitas made with tender meat and colorful vegetables, perfect for busy families.


Ingredients

  • 1 lb chicken breast or beef strips
  • 1-2 bell peppers, sliced
  • 1 medium onion, sliced
  • 1 packet fajita seasoning (or homemade blend)
  • 2 tablespoons lime juice (optional)
  • 1 tablespoon olive oil (optional)
  • 1 cup diced tomatoes or tomato sauce (optional)
  • Tortillas, rice, or toppings of choice


Instructions

  1. Place the chicken or beef at the bottom of the crockpot.
  2. Layer the sliced onions and bell peppers on top.
  3. Sprinkle fajita seasoning over everything.
  4. Add lime juice, olive oil, or tomatoes if you prefer a juicier dish.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Once done, shred the chicken or beef with two forks and stir everything together.
  7. Serve with tortillas, rice, or other sides.

Notes

Squeeze fresh lime juice before serving for brightness. Use a mix of peppers for color.
