Description

A comforting and creamy chicken chili made in a crockpot that’s packed with flavor and nourishment.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 8 oz cream cheese
  • 1 packet ranch seasoning
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste


Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the black beans, kidney beans, corn, diced tomatoes, and chicken broth to the pot.
  3. Sprinkle the ranch seasoning, garlic powder, onion powder, salt, and pepper over the top.
  4. Add the cream cheese on top of the ingredients.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through.
  6. Shred the chicken with two forks and stir the chili to combine all ingredients.
  7. Serve warm and enjoy!

Notes

Use frozen chicken for quick prep, and feel free to mix and match beans or add veggies for variation.
