Ingredients

  • 3-4 boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 can (14 oz) diced tomatoes (with juice)
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Optional: chopped herbs (such as parsley or basil) for garnish


Instructions

  1. Prep the ingredients: Start by chopping the bell pepper, onion, and garlic. Set them aside.
  2. Layer your ingredients: In the crockpot, layer the chicken breasts on the bottom. Pour in the chicken broth followed by the diced tomatoes, bell pepper, onion, and minced garlic.
  3. Season it up: Sprinkle the Italian seasoning, salt, and pepper over the ingredients in the crockpot. You can also add other spices if you desire.
  4. Slow cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours. The chicken should be tender and easy to shred.
  5. Shred the chicken: Once cooked, use two forks to shred the chicken directly in the crockpot, mixing it with the remaining ingredients to soak up all that delicious flavor.
