Ingredients
- 3-4 boneless, skinless chicken breasts
- 1 cup chicken broth
- 1 can (14 oz) diced tomatoes (with juice)
- 1 bell pepper, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- Optional: chopped herbs (such as parsley or basil) for garnish
Instructions
- Prep the ingredients: Start by chopping the bell pepper, onion, and garlic. Set them aside.
- Layer your ingredients: In the crockpot, layer the chicken breasts on the bottom. Pour in the chicken broth followed by the diced tomatoes, bell pepper, onion, and minced garlic.
- Season it up: Sprinkle the Italian seasoning, salt, and pepper over the ingredients in the crockpot. You can also add other spices if you desire.
- Slow cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours. The chicken should be tender and easy to shred.
- Shred the chicken: Once cooked, use two forks to shred the chicken directly in the crockpot, mixing it with the remaining ingredients to soak up all that delicious flavor.
- Garnish and serve: Optionally, garnish with chopped herbs before serving.
Notes
Preferably use fresh chicken; frozen may require additional cooking time. For best results, avoid overcrowding the crockpot.
