Description

A quintessential comfort dish that brings warmth and joy to any dining table with tender chicken and flavorful vegetables.


Ingredients

  • 1 whole chicken
  • 4 medium carrots, chopped
  • 4 medium potatoes, chopped
  • 1 onion, chopped
  • 2 cups chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 1 tablespoon olive oil


Instructions

  1. Heat olive oil in a skillet over medium heat. Season the chicken with salt and pepper and brown it in the skillet for about 5 minutes on each side.
  2. Place the chopped carrots, potatoes, onion, and garlic in the bottom of the slow cooker.
  3. Pour the chicken broth over the vegetables.
  4. Add the browned chicken on top of the vegetables.
  5. Sprinkle thyme and rosemary over everything.
  6. Cover and cook on low for 360-480 minutes or on high for 240-300 minutes until the chicken is cooked through and the vegetables are tender.
  7. Serve warm and enjoy.

Notes

For a thicker gravy, mix a tablespoon of cornstarch with cold water and stir it into the broth during the last 30 minutes of cooking.
