Ingredients
- 1 whole chicken
- 4 medium carrots, chopped
- 4 medium potatoes, chopped
- 1 onion, chopped
- 2 cups chicken broth
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Season the chicken with salt and pepper and brown it in the skillet for about 5 minutes on each side.
- Place the chopped carrots, potatoes, onion, and garlic in the bottom of the slow cooker.
- Pour the chicken broth over the vegetables.
- Add the browned chicken on top of the vegetables.
- Sprinkle thyme and rosemary over everything.
- Cover and cook on low for 360-480 minutes or on high for 240-300 minutes until the chicken is cooked through and the vegetables are tender.
- Serve warm and enjoy.
Notes
For a thicker gravy, mix a tablespoon of cornstarch with cold water and stir it into the broth during the last 30 minutes of cooking.
