Description

A delightful and easy dish with tender chicken, rich Marsala wine sauce, and earthy mushrooms, perfect for busy families and meal prep.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup sliced mushrooms (button or cremini)
  • 1 cup Marsala wine (or chicken broth for a non-alcoholic version)
  • 2 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a skillet over medium heat, add olive oil. Sauté the onions and garlic until translucent and fragrant, about 3-4 minutes.
  3. Place the seasoned chicken breasts at the bottom of the crockpot. Layer the sautéed onions and garlic over the chicken, then add the sliced mushrooms on top.
  4. Pour the Marsala wine (or chicken broth) over the ingredients. Sprinkle thyme and Italian seasoning on top.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and fully cooked.
  6. Remove the chicken and mushrooms, serving with sauce drizzled on top. Garnish with fresh parsley before serving.

Notes

For extra tender chicken, avoid opening the lid during cooking. Use chicken broth or a mix of lemon juice and water in place of Marsala wine for non-alcoholic options.
