Ingredients
- 2 cups cooked rice
- 1 pound boneless, skinless chicken breasts, diced
- 1 cup mixed vegetables (peas, carrots, corn)
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a slow cooker, combine cooked rice, diced chicken, mixed vegetables, soy sauce, minced garlic, sesame oil, salt, and pepper.
- Stir well to combine.
- Cover and cook on low for 240-360 minutes or until the chicken is fully cooked and tender.
- Once done, fluff the rice with a fork, garnish with chopped green onions, and serve.
Notes
For best results, use leftover cold rice to prevent mushiness. Check for chicken tenderness after 4 hours to avoid overcooking.
