Description

A delightful one-pot dish combining tender chicken, colorful vegetables, and fluffy rice, cooked to perfection in a slow cooker.


Ingredients

  • 2 cups cooked rice
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Green onions for garnish


Instructions

  1. In a slow cooker, combine cooked rice, diced chicken, mixed vegetables, soy sauce, minced garlic, sesame oil, salt, and pepper.
  2. Stir well to combine.
  3. Cover and cook on low for 240-360 minutes or until the chicken is fully cooked and tender.
  4. Once done, fluff the rice with a fork, garnish with chopped green onions, and serve.

Notes

For best results, use leftover cold rice to prevent mushiness. Check for chicken tenderness after 4 hours to avoid overcooking.
