Description
A comforting and warming chowder that’s perfect for chilly days, packed with flavors and easy to make in a crockpot.
Ingredients
- 2 cups chicken breast, cooked and shredded
- 4 cups corn kernels (fresh, frozen, or canned)
- 1 medium onion, chopped
- 2 cups potatoes, peeled and diced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Crispy bacon, shredded cheese, or sour cream for topping (optional)
Instructions
- In the crockpot, combine the chicken, corn, onion, potatoes, and chicken broth.
- Cook on low for 360-480 minutes or high for 180-240 minutes.
- About 30 minutes before serving, stir in the heavy cream and season with salt and pepper.
- Serve warm, topped with crispy bacon, cheese, or sour cream if desired.
Notes
Use rotisserie chicken for added flavor and quicker preparation. Adjust thickness with more or less heavy cream as needed.
